Serves 4 servings

3-4fresh corn tortillas per person
9-10 ozadobera cheese (250-300 grams)
Salsas to taste: green, red, chipotle, habanero, etc

Warm the tortillas in a skillet or on a griddle so they don't break when folded.

Fill generously with cheese and fold the tortillas in half.

Heat a skillet, add a splash of oil, and fry the quesadillas until golden.

Serve immediately while hot.
