Make Sauce

Finely dice garlic and red onion

Quarter the tomatoes

Heat a splash of olive oil up in a large pan, add 3/4 of diced garlic and onions, add all the tomatoes and cook down into sauce base.

Peel and grate carrots

Add 3/4 of carrots to the sauce

Add dash of red wine

Finely dice chorizo and add 3/4 to sauce

Add generous amount of salt and pepper

Chop 1/2 Basil and add to sauce

You can add some dry mixed herbs if you wish but tend to go with just fresh Basil

Cook sauce for further 5mins then pour into large blender jug attachment and blitz

Slice a handful of cherries in half and de-pip, add to sauce to sweeten to taste while in blender

Make Meatballs

Take slice of brown bread and tear up, using blender and separate small attachment blitz into bread crumbs,

Bring together on chopping board all the 1/4 remaining ingredients, garlic, onion, carrots, chorizo, 1/4 basil (leave 1/4 behind).

Add finely diced chill for some heat

You can add sweet paprika as well

Crack 1 egg into mix and break yoke.

Add mince meat to the mix and start to mix together by hand (need to get your hands dirty) sprinkle in 1/2 the breadcrumbs until mixture becomes more tight, if still loose add more breadcrumbs until mixture properly starts to stick together so you can roll into golfball size meatballs

In the pan used to cook the sauce heat a little olive oil and fry off the meatballs until browned off, depending on pan size you may have to cook 4-5 at a time.

Once meatballs are browned off add sauce to the pan, sprinkle on remaining basil, add a lid and slowly cook while making green salad

Dice small peppers (I like to dice into rings)

Add peppers to sauce

Dice the spring onions

Finley chop the courgette or use a cone slicer to make courgette spaghetti.

In a pan heat a small dash of olive oil and balsamic vinegar together, add spring onions, peas and broad beans and cook for 1-2minutes.

Add 1/2 cup of water, salt and pepper

Add courgette

Cook for 5-10mins on high heat until broad beans are soft. You may require more water if it boils off, any excess water drain.

On a plate sprinkle spinach leaves

Add green salad

Now add meatballs on top and spoon over sauce

Sprinkle on parmesan cheese
