Honey-Buttermilk fried chicken

Combine sliced jalapeño, thick cut yellow onion, kosher salt, black pepper, Cayenne pepper, honey, pepper sauce, garlic powder, onion powder, rosemary, thyme, and baking powder into buttermilk

Cut chicken to strips across grain (for easy pull-apart) or into nuggets and brine in buttermilk mixture for over four(4) hours up to 24 hours.

Prepare two mixing bowls for coating mix and egg wash.

Coating mix: mix flour, Cayenne pepper corn starch, and black pepper

Wash mix: wisk 3 egg yolks and bottle of beer, you can add buttermilk here.

Rinse chicken under water. Dip chicken in coating, then dip in wash, then coating again. Repeat up to three(3) times.

Deep fry at 375°F for four(4) minutes or until internal temperature of 175°F.

Circumstantial baking necessary if coating is done before chicken.
