Ingredients

  • 2 lbchicken breast
  • 2 cupsbuttermilk
  • 2 tbspkosher salt
  • 2 tbspfreshly ground black pepper
  • 1jalapeño
  • 1yellow /Vidalia /Spanish onion
  • 2 tbspCayenne pepper
  • 2 tbspraw honey
  • 1 tbspgarlic powder
  • 1 tbsponion powder
  • 1 tbsppepper sauce
  • 1 tbsprosemary
  • 1 tbspthyme
  • 2 tbspbaking powder (savour-lock)
  • Ratio 3:1 of flour to corn starch
  • to tasteCayenne and black pepper
  • 3egg yolks
  • 1 bottlefavorite beer

Steps

  1. 1

    Combine sliced jalapeño, thick cut yellow onion, kosher salt, black pepper, Cayenne pepper, honey, pepper sauce, garlic powder, onion powder, rosemary, thyme, and baking powder into buttermilk

  2. 2

    Cut chicken to strips across grain (for easy pull-apart) or into nuggets and brine in buttermilk mixture for over four(4) hours up to 24 hours.

  3. 3

    Prepare two mixing bowls for coating mix and egg wash.

  4. 4

    Coating mix: mix flour, Cayenne pepper corn starch, and black pepper

  5. 5

    Wash mix: wisk 3 egg yolks and bottle of beer, you can add buttermilk here.

  6. 6

    Rinse chicken under water. Dip chicken in coating, then dip in wash, then coating again. Repeat up to three(3) times.

  7. 7

    Deep fry at 375°F for four(4) minutes or until internal temperature of 175°F.

  8. 8

    Circumstantial baking necessary if coating is done before chicken.
