Very easy & inexpensive. Quick to prepare, will serve up to 6+ dependent on portion size for meal. I have ¼ batch over 4 days with a homemade mini burger bun made from my favourites. You can use coconut milk instead of single cream or any other you like but this will effect the calories & nutrition.

  • For the soup
  • 800 mlcold water
  • 1000 gramscelery washed & cut small
  • 100 gramscarrot peeled & diced
  • 100 gramsred onion chopped
  • 1veg cube i used knorr
  • 1bit chilli powder
  • 1bit ground cumin
  • 1bit white pepper
  • 1bit garlic granules
  • 75 gramsalpro single cream
  • Whole Batch....NUTRITION
  • 16Total Fat
  • 2Sat fat
  • 640Sodium
  • 6Potassium
  • 32Carbs
  • 17Fibre
  • 23sugar
  • 11Protein
  • 260Vitamin A
  • 2Vitamin C
  • 2Calcium
  • 6Iron

Steps

    Add all veg to a pan or slow cooker. I used an 8 in 1 on 140°

    Pour on water, then add the spices & stock cube then stir. See pic for amount of each spice.

    Stir in, pop lid on & cook until veg are soft. Mine took 45 minutes.

    When cooked, let cool for 5+ minutes then blend with a stick blender.

    Add cream & blend in.

    Divide in bowls, serve or cool & lid. Then keep in the fridge up to 4 days...
