This is a recipe that goes well with just about anything, especially simple sides like mashed potatoes, steamed vegetables, or just plain white rice.

Wash the pork ribs and boil them in water for 30 minutes with bay leaves and cumin.
While the ribs are cooking, prepare the sauce:
Mix all the sauce ingredients very well until smooth. Taste and check that it’s not too salty; if it is, add more tomato puree. Heat the sauce, stirring constantly, until it thickens to a syrup-like consistency.

Preheat the oven to 375°F (190°C).
Place the ribs in a baking dish with the meatiest side down. Pour some sauce over the ribs, reserving some to baste several more times while baking (at least 4 times).
After 1 hour, turn the ribs over and baste again with the sauce. Continue baking for another hour or until the bones are more visible because the meat has pulled back during cooking. - 3
Serve in a serving dish and pour the hot sauce over the meat.
It’s important to choose fresh pork, not previously frozen, and wash it before cooking.
