First tried this recipe while on a diet years ago and I couldn't believe how flavoursome it was. I always come back to it. enjoy it with plenty vegetables on the side if you want to keep calories down. otherwise lovely with a nice crusty baguette.

Ingredients

6 servings
  1. 1 tspolive oil, extra virgin
  2. 3red onions chopped
  3. 3garlic cloves chopped finely
  4. 650 gramsdiced lamb shoulder
  5. 1 tbspplain flour heaped
  6. 3 tsppaprika (I substituted one of them by smoked paprika)
  7. 1 pinchsalt
  8. 1 pinchfreshly ground pepper
  9. 3 pintslamb or meat stock
  10. 3celery sticks
  11. 300 gramssmall closed cup mushrooms
  12. 3 tbsptomato puree
  13. 15 gramsdry mushrooms
  14. 600 gramsnew potatoes chopped
  15. 1 tspdried herbs. parsley. thyme.

Cooking Instructions

    sautee the onion and garlic with a small amount of oil in a non stick pan until browned a bit.

    add the lamb and season with salt and pepper. cook until meat sealed.

    sprinkle with the flour and paprika and let it cook out for 1 minute so that it releases the flavour

    Add the lamb stock

  5. 5

    add the rest of the ingredients and cover.

    you can either simmer for 1 hour until potatoes and meat are tender or transfer to slow cooker-crock pot.

    If on the slow cooker cook on high for 1 hour and reduce to low and caary on cooking for 3-4 hours.

    To make it low fat you can skim the floating fat at the end. It will depend on how lean your lamb was.
