First tried this recipe while on a diet years ago and I couldn't believe how flavoursome it was. I always come back to it. enjoy it with plenty vegetables on the side if you want to keep calories down. otherwise lovely with a nice crusty baguette.

Cooking Instructions

sautee the onion and garlic with a small amount of oil in a non stick pan until browned a bit.

add the lamb and season with salt and pepper. cook until meat sealed.

sprinkle with the flour and paprika and let it cook out for 1 minute so that it releases the flavour

Add the lamb stock
- 5
add the rest of the ingredients and cover.

you can either simmer for 1 hour until potatoes and meat are tender or transfer to slow cooker-crock pot.

If on the slow cooker cook on high for 1 hour and reduce to low and caary on cooking for 3-4 hours.

To make it low fat you can skim the floating fat at the end. It will depend on how lean your lamb was.
