Anyone who knows me knows that I am a big big fan of pasta; spaghetti, macaroni, ravioli, Penne, tortellini, linguine, tagliatelle...and my latest love (Italian movie soundtrack) 🖤le fettuccine🖤 I honestly think I deserve an Italian name by now😂😂(call me Alessia)

This recipe has been long anticipated, so here it is, it's fun and tasking as well(just the kneading part😥)

Cooking Instructions

On a flat surface, measure 200g of flour, mould flour into a cone shape on the flat surface

Create a hole in the middle of the flour cone to look like a volcano 🌋; this is called the well method

Put unbeaten whole eggs or egg yolks in the middle of the volcano (inside the well)

Beat eggs from inside with a fork, adding the flour poco a poco to the egg mixture using the fork.

Work the dough when firm enough to work on with hands

Keep moulding the dough.

Then mould into a ball and oil the surface of the ball with the olive oil
- 8
Put in a plastic wrap and refrigerate for about 30 mins

Once you press the dough it comes back up and it's elastic

Now knead! Make the dough really flat on all sides and cut into desired shape (I chose to make fettuccine, you can choose to make another type of pasta)

I haven't turned back from homemade noodles since. I expanded my horizons to pasta as well, and came up with these noodles.The noodles are moistureless and made only with egg, so it gives birth to a nice texture. When using large-sized eggs, increase the amount of flour by 1 tablespoon. I use one approximately 65 g medium egg.(including the shell). I got a sudden craving for homemade pasta, so I searched for various homemade pasta recipes and tried them out, and settled on my own variation with ingredients that suited my tastes. There might be combinations that are easier to shape and have more body, so I am still in the process of experimenting.(The photo shows a dish covered with walleye pollack roe carbonara sauce. It is thick and full-bodied. (Since I cut it myself...) so it matched well with the carbonara sauce.Please minutely adjust the amount of water used based on the season and the particular day's temperature and humidity. (After kneading by hand for 10 minutes, I ended up with a rather thick bodied pasta with a pleasantly springy texture. (It takes some strength, but do your best to knead the dough).It is difficult to spread out the dough thinly, but do your best! (It must be nice to have a pasta machine).When cutting the noodles, it is tastier if you cut the noodles as thinly as possible. (Since the noodles are rather thick-bodied). For 2 servings.
