Steps

Preheat oven to 180°C. Grease and dust with flour a baking tray.

Place sifted flour, baking powder, pinch of salt and sugar in a bowl. Add the soft margarine and rub together until it resembles crumbs.

Beat the eggs and vanilla essence and pour into the flour mixture. Knead into a soft dough for about five minutes. Add the the Cake Fruit Mix and knead to mix well. Add more flour if it's too soft to handle.

Divide the dough into two and roll out one half on a floured surface to form a long sausage-like shape. Place on one side of the prepared baking sheet. Flatten the top a little. Repeat with the other half and place it next to the first one.

Bake for 20 minutes, until golden brown.
Take out of the oven and cool. Once cool, cut them into small slices and place them back onto the baking tray. Bake again for further 10-15 minutes. - 6
Serve cool with tea and enjoy.
