  2. 3 ozPancetta
  3. 1 cupSpelt
  4. 3Carrots
  5. 1Fennel bulb
  6. 4Garlic cloves
  7. 3Celery stalks
  8. 1Onion
  9. 1 tbspTomato paste
  10. 1/2 tspChili flakes
  11. 10 cupVeg broth
  12. 1 bunchKale
  13. 1 canWhite beans
  14. 1 pinchShaved Parmesan

Steps

1 hour 30 mins
  1. 1

    Heat oil in large pot. Add pancetta 3 min.

  2. 2

    Add spelt until toasted - 3 min

  3. 3

    Slice onions, carrots, fennel, celery, and garlic in food processor.

  4. 4

    Add to pot and sautee 6-8 min

  5. 5

    Add tomato paste & chili flakes - 1 min

  6. 6

    Add broth. Bring to boil. Reduce to simmer for 60 min

  7. 7

    Add torn kale leaves & beans. 4 min

  8. 8

    Pour in bowls. Drizzle with olive oil. Top with shaved Parmesan
