Ingredients

8 servings
  • 2 lbShrimp, peeled and deveined
  • Marinade
  • 1/4 cupTequila
  • 1/4 cupLime juice
  • 1/2 cupOlive Oil
  • 2 tbspCilantro, chopped
  • 1Scallion, chopped (white and green)
  • 1/4 tspSalt
  • 1/4 tspBlack Pepper
  • 1/4 tspChili Powder
  • 2Garlic Cloves, crushed
  • After Marination
  • 1/2 tspCrushed Red Pepper
  • 1/2 tspSalt
  • 1as needed Olive Oil

Steps

  1. 1

    Mix marinade ingredients.

  2. 2

    Combine shrimp and marinade in resealable plastic bag. Squish to distribute marinade.

  3. 3

    Let sit 1-4 hours. If marinading more than an hour, refrigerate.

  4. 4

    Skewer shrimp and put in a rack in the refrigerator to dry for 30 mins.

  5. 5

    Remove 30 mins before grilling to come to room temperature.

  6. 6

    Sprinkle with salt and crushed red pepper and lightly coat with olive oil.

  7. 7

    Grill over hot coals for 6 mins or until pink and kissed by flames.

  8. 8

    Serve with limes and coronas!
