Ingredients

2 lbgreen beans, trimmed
1orange bell pepper, cut into 1/2 in strips
1small red onion
2 clovegarlic, sliced
2 tbspbalsamic vinegar
2 tspolive oil
1salt and pepper, to taste
1grated parmesan cheese, for garnish

Steps

Preheat oven to 400. Toss green beans, pepper, onion and garlic with vinegar and oil, and spread onto sheet pan.

Roast for about 20 minutes or until veggies reach desired tenderness.

Season with salt and pepper. Sprinkle with Parmesan if desired.
