Ingredients

  1. 4Idaho potatoes
  2. 1/2 stickbutter
  3. 1/2 cupmilk
  4. 1 tspgarlic powder
  5. 1salt & pepper
  6. 2 cupveggie chilli
  7. 1scallion

Cooking Instructions

1 hour 30 mins
  1. 1

    Wrap potatoes in aluminum foil & bake in 400° preheated oven for 1 hour.

  2. 2

    Cut potatoes in half & scoop out inside & heat & mash with remaining ingredients except chilli & scallions & make mashed potatoes.

  3. 3

    Scoop mashed potatoes into the potato skins & with back of spoon press into center of mashed potatoes.

  4. 4

    Bake again in 400° oven until mashed potatoes start to brown lightly.

  5. 5

    Scoop in hot chilli & garnish with scallions & serve.
