Ingredients

  • 10river prawns
  • 1.1 lbssquid (about 500 grams)
  • 10.5 ozstraw mushrooms (about 300 grams)
  • 3 stalkslemongrass
  • 1 piecegalangal root
  • 10kaffir lime leaves
  • 20Thai chili peppers
  • 3 tablespoonsThai chili paste (nam prik pao)
  • 1 cupevaporated milk (240 ml)
  • 3 cupswater (720 ml)
  • 6limes
  • 1soup ladle fish sauce (about 3 tablespoons / 45 ml)
  • 1/2 tablespoonsalt (7 grams)
  • 1/2 teaspoonMSG (optional)
  • 1 packettom yum seasoning
  • 6sawtooth coriander leaves (culantro)

Steps

  1. 1

    Bring the water to a boil. Add galangal, lemongrass, kaffir lime leaves, and Thai chili peppers.

  2. 2

    Add the chili paste and evaporated milk. Season with all ingredients except lime juice.

  3. 3

    Add mushrooms and shrimp. When the shrimp are almost cooked, add the squid.

  4. 4

    Add culantro leaves and turn off the heat.

  5. 5

    Ladle into bowls, squeeze in lime juice, and adjust seasoning to taste.
