Bring the water to a boil. Add galangal, lemongrass, kaffir lime leaves, and Thai chili peppers.

Add the chili paste and evaporated milk. Season with all ingredients except lime juice.

Add mushrooms and shrimp. When the shrimp are almost cooked, add the squid.

Add culantro leaves and turn off the heat.

Ladle into bowls, squeeze in lime juice, and adjust seasoning to taste.
