So basically, my fridge often has these left over small amount of veggies, say one small cauliflower, two to three small carrots, one beat root or something. And hence, a day of the week always come across as the day to utilize all those vegetable. This breakfast tikki can be called as 'whatever veggies in your fridge' tikki, very apt to be relished with raw mango and mint chutney or even curd of that matter. Ingredients given for the tikki are the veggies that were left in my fridge, you can obviously add all the other veggies like carrot or cabbages what so ever can make good tikkis.

Ingredients

2 servings
  1. 1Small cauliflower
  2. 1/2beat root
  3. 1Onion
  4. 1Green Chilli
  5. 10-15peanuts (Roasted, peeled and crushed)
  6. 1 Cuppaneer crumble (I made this paneer out of the extra packet of 1 lt milk I was left over)
  7. 1 tspKasoori Methi
  8. 2-3Chopped fresh Coriander
  9. 1 tspChilli Powder
  10. 1 tspCarom Seeds (Ajwain)
  11. 1/4 tspTurmeric (Haldi)
  12. to tasteSalt according
  13. as neededBread Crumbs

Steps

  1. 1

    In a mixing jar, churn the cauliflower florets, small pieces of beat root, chilli and onion together. After they are churned well, add chopped coriander to this mixture and incorporate them well.

    In a pan, heat some oil. Once it's hot add carom seeds to the oil. After the seeds crackle a little, add the spices exept Kasoori Methi and saute for a while. Then add the vegetable mixture into the oil and cook till it becomes a little dry. Add Salt after a while mix well. Turn off the burner and add kasoori methi to this. Give this a good mix again.

    Add crumbled paneer and roasted crushed peanuts to the mixture and mix well.

    At last add the bread crumbs. You might have to adjust the salt after this step. So make sure to check once.

    Make tikkis out of this and roast them on a heated and oil greased tava.

    Serve them with whatever chutney that makes you happy. Gobble and you are done for the breakfast!
