Chilaquiles with Red Sauce

There are many ways and methods to make chilaquiles. In this video, I'll show you how to cook a single serving of chilaquiles—perfect if you live alone or just need breakfast for one.

Prepare the tortilla chips. If you already have a bag ready, use 1 or 2 handfuls and skip to the preparation step. Otherwise, cut 3 to 4 corn tortillas into triangles or strips.

Heat 2 ladles of oil in a skillet over high heat for 1 minute.

Reduce the heat to medium and add the tortilla triangles one by one, making sure the oil almost covers them.

After about 1 or 2 minutes, once they are soaked, flip each one so they crisp up on the other side.

Once the tortilla chips are golden and crispy, remove them from the skillet and drain them on a paper towel to remove excess oil.

In another skillet, heat half a ladle of oil over medium heat for about 30 seconds.

Add the tortilla chips along with 3 ladles of your chosen sauce.

Stir so that all the chips are coated. If the sauce is too thick or the chips aren't fully coated, add another spoonful of sauce.

Cover the skillet for 30 seconds.

Uncover. If you like them crispy, remove and serve them now. If you prefer them softer, wait until the chips have a more tender consistency.

Serve on a plate with beans, eggs, steak, chorizo, or any topping you like.

Add cheese and onion to taste. If you want the cheese melted, microwave the plate for 20 seconds to melt the cheese.
