Cauliflower Cheese with Bacon bits
One of my favourite dishes!
Steps

Cut across root of cauliflower, discard root and pull off green leaves and slice into small pieces. Cut cauliflower head into 4 then pull apart into florets. Add to steamer. Cook for about 10-15 minutes

Add Flour and Butter to a medium saucepan and cook until just turning brown. Add 1/2 of the milk and stir quickly to remove any lumps. Then slowly add the rest of the milk and the water. Bring to boil and simmer.

Add mustard, stir as sauce thickens, simmer.

Grate cheese, add to sauce and stir in until smooth.Add Black Pepper to taste.

Slice bacon into very small bits and fry gently with the oil until soft in a large sauce pan, making sure it does not burn!

Add cheese sauce to bacon bits and stir. Then add soft cauliflower white and greens to pot, mixing well.
