From America's test kitchen. The Parmesan at the bottom makes a crust and the whole thing goes together quickly. I substituted cheddar cheese for the Gouda and got good results.

Ingredients

  1. 2 tablespoonsParmesan cheese, finely grated
  2. 4green onions, finely chopped (or 1/2 onion, chopped)
  3. 8 oz.Gruyere cheese, shredded (or cheddar)
  4. 4 ozHam, chopped
  5. 1/2 cupflour
  6. 3/4 tspBaking powder
  7. 1/2 tspGround black pepper
  8. 1 cupHalf and half
  9. 4eggs
  10. 2 tablespoonsButter, melted
  11. 2 teaspoonsDijon mustard
  12. 1/8 teaspoonNutmeg

Cooking Instructions

    Butter pie plate. Sprinkle Parmesan cheese in to coat

    Toss gruyere, ham and scallions in a bowl, mix with hands until well combined. Dump in pie plate

  3. 3

    Add flour, salt, pepper, baking powder to a bowl. Slowly whisk in half and half, then add eggs and whisk. Add in butter, nutmeg and mustard and mix until well combined.

    Dump liquid into pie plate. Put on BOTTOM rack of oven at 350° for 35 minutes. Let cool for 15 minutes before serving.
