Ingredients

20 mins
6 to 8 servings
  1. 1/4red onion chopped
  2. 4garlic cloves
  3. 2Roma tomatoes chopped
  4. 1Chipotle pepper
  5. To 8oz cans roasted tomatoes
  6. 1/4 cupcilantro chopped
  7. 1 tbspolive oil
  8. to tasteSalt & Pepper

Steps

20 mins
  1. 1

    Bring a medium pan to high heat. When pan starts to smoke, poor your olive oil. Add your onions, garlic, and Roma tomatoes. Saute for 8 minutes.

  2. 2

    After 8 minutes, add your pepper and both cans of diced tomatoes and cilantro. Saute for 12 minutes.

  3. 3

    After 12 minutes, turn heat off and let cool for 10 minutes. After it cools pulse blend a few times. Keeping texture to your salsa then serve.
