Ingredients

  1. 4Chicken Breasts
  2. Tortilla Shells
  3. Green and Red Peppers
  4. Cheddar Cheese
  5. 2 TbsLime Juice (Marinade)
  6. 2 TbsOlive Oil
  7. 1 TbsCilantro
  8. 1 TbsGarlic Powder
  9. 1/2 TbsOnion Powder
  10. 1/2 TbsSalt
  11. 1/2 TbsCrushed Red Pepper
  12. Optional: A couple splashes of tequila

Cooking Instructions

    Cut chicken into small chunks and place in small mixing bowl.

    Mix together lime juice, olive oil, cilantro, garlic powder, onion powder, salt, and crushed red pepper (tequila can be mixed in here too if using it) in a bowl and drizzle over chicken.

    Mix chicken and marinade thoroughly and cover with tin foil and refrigerate until ready to cook (if cooking within an hour, leave it out)

    Cut peppers into bite size strips. For flavor splash lime juice and place some salt on strips and mix with hands. Refridgerate untill ready to cook.

    When chicken has marinaded heat some olive oil in a pan, when warm add chicken and cook until chicken is seared a bit. After place chicken in tin foil, stacked, and set aside while cooking peppers.

    In same pan, place peppers and mix with a metal spoon to get burnt pieces mixed in. Cook until peppers are tendercrisp.

    Serve in tortillas with cheese and any extra sauce or filling of your choice.
