Ingredients

  1. For vegetable kofta:
  2. 1/2 cupgrated cabbage
  3. 1/2 cupgrated cauliflower
  4. 1/4 cupboiled peas
  5. 1/2 cupspinach finely chopped
  6. 1boiled and mashed potato
  7. 1/4 cupmashed paneer
  8. 2 tbsproasted Besan
  9. 2-3green chillies finely chopped
  10. to tasteSalt
  11. 1/2 tspred chilli powder
  12. 1 tspCoriander powder
  13. Oil to fry
  14. Ingredients for gravy:
  15. 2Onion roughly chopped
  16. 1/4beetroot
  17. 1 inchGinger chopped
  18. 4-5 clovesGarlic chopped
  19. 1/2 cupWater
  20. 4Tomatoes roughly chopped
  21. 5-6cashews
  22. 2 tablespoonsOil
  23. 1Bay leaf
  24. 2Black cardamom
  25. 4Green cardamoms
  26. 1 inchCinnamon stick
  27. 1 tspRed chilli powder
  28. 1 tspCoriander powder
  29. 1/2 tspTurmeric powder
  30. 1/2 tspGaram masala
  31. 1 tbspKasuri methi
  32. to tasteSalt
  33. 1 cupWater
  34. to tasteSalt
  35. 1/4 cupfresh cream or malai
  36. For garnish : cheese or cream

Steps

  1. 1

    Wash spinach and rinse it. Boil it in 1/2 cup of water. Once done. Strain it and squeeze it's water.Combine all ingredients of kofta except oil.

    Mix all properly.

    Make lemon size balls. Keep aside.

    Heat oil in a Kadhai. Once oil heated slide koftas in it. Deep fry them until golden on medium flame. Fry all koftas. Keep them aside.

    Method for gravy:

    Take onion, ginger, garlic and cashews along with little water in a grinder and make a smooth paste.

    In the same grinder, make tomato, beetroot & green chillies puree and keep it aside.

  7. 7

    Heat the oil in a pan on medium heat and add bay leaf, cinnamon stick, black and green cardamom. Saute for a minute.

  8. 8

    Then Add onion paste and cook till it becomes thick paste and no more smells raw.

  9. 9

    Then mix in tomato puree and cook till it becomes thick paste and leave the sides of the Kadhai. Do stir in between and make sure that it is not sticking to the Kadhai.

    Now mix in salt, turmeric powder, coriander powder and red chilli powder, cook for a minute.

    Then add water to make gravy and simmer for 4-5 minutes.

    Then add garam masala and kasoori methi, mix well. Lastly add cream and bring to a single boil and turn off the stove.

  13. 13

    At the time of serving:

    Place kofta in serving bowl. Pour gravy over koftas. Grate cheese.
    Serve hot with mint nann & chilled lassi, papad & salad.
