Ingredients

10 servings
  • 1jicama, thinly sliced
  • 1/2 cupqueso fresco (about 60 grams), crumbled
  • Salsa:
  • tomato
  • onion
  • serrano pepper
  • Optional: lettuce, sour cream, leftover cooked dishes

Steps

  1. 1

    Wash, peel, and thinly slice the jicama.

  2. 2

    Top each slice with a little refried beans.

  3. 3

    Add spicy salsa and crumbled queso fresco.

  4. 4

    Optional: Add a bit of leftover cooked dish. In this case, I used cauliflower and potatoes in guajillo chili sauce that someone gave me.
