Ingredients

  1. 1onion sliced
  2. 300 gramBasmati rice
  3. 1 tablespooncashew nuts
  4. 3-4bay leaves
  5. 3-4big Cardamom
  6. 4green cardamom
  7. 4cloves
  8. 6-8nos black pepper corns
  9. 1 inchcinnamon
  10. 3-4star anise
  11. 1 pinchsaffron
  12. to tastesalt
  13. For veg Gravy :
  14. 1small carrot
  15. 1/4 cupgreen peas
  16. 1/2green capsicum
  17. 1onion
  18. 3 teaspoonginger garlic paste
  19. 3-4 teaspoonmelon seeds
  20. 1/2 cupcoriander leaves
  21. leavesfew mint
  22. 2-3green chillies
  23. 1/2 teaspoonturmeric
  24. 1-2 tablespoonBiryani Masal
  25. 1 teaspoonshahi jeera
  26. 5-6nos round red chilli
  27. to tastesalt
  28. 3 tablespoonghee
  29. 1/4beetroot for colour
  30. 1-2 teaspoonred chilli powder
  31. 2-3 tablespooncurd
  32. whole wheat dough to seal
  33. 2Tomatoes
  34. 1/2yellow capsicum

Cooking Instructions

    First soak Saffron in warm milk and keep aside.

    Wash and soak rice for 20 minutes

    Heat a Kadhai with ghee, and add cashew and fry till brown colour.

    Keep it Aside.

    Add Sliced onion in the same ghee.

    Fry till it is crisp.

    Keep it aside.

    In the same ghee add bayleaf, clove, cinnamon, cardamom, Fry for 30 seconds.

    Now add rice, saute it.

    Now Divide rice into 3 parts.

    1 part is white rice.

    2nd Part is red rice, add chopped beetroot into this.

    3 rd is yellow rice, add soaked saffron into this.

    Now cook 3 parts of rice separately till 75% done, keep aside.

    Keep white rice in a strainer.

    Keep yellow rice in a strainer.

    Keep red rice in a strainer.

    For gravy soak melon seeds, in warm water for 30 minutes.

    Add melon seeds, coriander, mint leaves, green chillies into a mixer jar, grind to smooth paste.

    Hear a Kadhai with a ghee.

    Add Shahi jeera and some whole spices, round chillies and onion fry till golden brown.

    Now add in ginger garlic paste, biryani Masala, red chilli powder and saute it.

    Fry till raw smell goes off.

    Chopped Carrot.

    Chopped Onion, French beans, capsicum.

    Chopped Tomatoes.

    Now add in curd.

    Add the chopped tomatoes, carrot, french beans, capsicum green peas saute for 5 minutes.

    Add melon seeds paste.

    For the Parda knead whole wheat aatta.

    Roll the dough into a 12 inch circle and wet the edges with some water.

    Preheat the oven, I have hallogen oven.

    Take handi spread some cooked rice then spread some prepared vegetables over the rice.

    Again layer it with some rice.

    Sprinkle over some slice browned onions and fried cashews.

    Now cover the handi with the dough.

    Put it into the oven and bake for 10 minutes untill the top gets dark brown spots.

    Cut open the covering and serve biryani with raita and some sliced onion, tomatoes.

    Your unique and delicious Vegetable Parda biryani is ready.
