    Cut the eggplant and carrots into pieces. In a pan fry garlic, onions and tomatoes. Stir and add chilli powder, garam masala, coriander powder,. Curry powder, and tomato paste. Stir again to incooperate, add maggi cubes and salt. The eggplant and carrots are pa-boiled, after frying all the ingredients, you add in the carrots and eggplants and let it simmer for a few minutes.
