Ingredients

  1. Ingredients for idli
  2. For batter
  3. 1 cupsemolina (rava)
  4. 1/4 cupcurds (dahi)
  5. to tastesalt
  6. 1 sachetEno
  7. Other ingredients:-
  8. 1 tspoil
  9. 1/2 tspmustard seeds (rai / sarson)
  10. 1/2 tspcumin seeds
  11. 1 tspurad dal (split black lentils)
  12. 1 tbspcashewnuts (kaju), broken into pieces
  13. 4-6curry leaves (kadi patta)
  14. 1 tspfinely chopped green chillies
  15. 1 pinchasafoetida (hing)
  16. For making snowman
  17. 1tomato
  18. 2cloves
  19. 1green chilli
  20. Ingredients for sambhar
  21. 1/2 cup split moong dal
  22. 1/2 cup toor dal
  23. 1/2 cuppeeled and chopped Bottle ground
  24. 1 tablespoonseedless tamarind(imli) soaked in ⅓ cup water
  25. 1tomato
  26. 1onion
  27. 4-5curry leaves
  28. 1/2 tbspsambhar masala powder
  29. 1green chilli
  30. 1 tbspginger garlic paste
  31. 1/2 tbspturmeric powder
  32. 1 pinchasafoetida(hing)
  33. Salt to taste
  34. 1 cupwater to be added later or add as required

Steps

    Steps for making sambhar:- soake both dal for half an hour in water.

  2. 2

    Cook dal in 2 to 2.5 cups water in the pressure cooker for 3 to 4 whistles on medium to high flame. the dal should become soft and mushy.

    Once the pressure settles down on it's own, remove the lid and take it out in a vessel.

  4. 4

    Now wash the pressure cooker with water and put it on the gas.Put oil in it, When the oil becomes hot, add a tbsp of urad dal and chopped green chillies and curry leaves.

    Once it turns red, add a pinch asafoetid and chopped onion and fry it until it turns red.After this add ginger garlic paste and saute with spoon.After this add the chopped tomatoes and saute.After this add the chopped bottle ground in it and saute.after this add masala,salt and saute it for 2 to 3 minutes.

    After that add 1cup water to it and close the pressure cooker lid and apply two whistles on high flame. Once the pressure settles down on it's own, remove the lid and put cooked dal and tamarind water in it and cook for 2 to 3 minutes on medium flame. Our less spiced shambhar is ready.Take it out in a vessel.

    Now for making idli:- Combine all ingredients together, except the Eno, with 1 cup of water in a deep bowl, mix well and cover and keep aside for 10 minutes.

    Heat the oil in a small non-stick pan, add the mustard seeds, cumin seeds, urad dal, cashewnuts, curry leaves, green chilies and asafoetida and sauté on a medium flame for 1 minute.

    Add this tempering to the prepared semolina batter and mix well.

  10. 10

    Just before steaming, add the Eno and mix gently.

  11. 11

    Pour 2 tbsp of the batter into each greased idli mould and steam in a steamer for 8 to 10 minutes.

    Cool slightly, demould and decorate idli like snowman with tomato and green chilli.

  13. 13

     serve immediately with sambhar .
