I never really ever liked yam till a few years ago.
I tried various ways to eat it... just never worked. ... so, I decided to try out different style of cooking it in porridge form.
Here is one of my new favourite ways to cook yam porridge. ..

Ingredients

  1. 1/2tuber Yam... peeled & cubed
  2. 2 sachetstomato paste
  3. 2 tablespoonsdry pepper
  4. 2seasoning cubes
  5. 1washed dried fish
  6. 1medium onion
  7. 2cooking spoons palm oil
  8. 1cooking spoon vegetable oil
  9. 2table spoons crayfish
  10. 1 teaspoonsugar
  11. 2 tablespoonslocust beans
  12. 1 1/2 cupswater
  13. to tasteSalt
  14. Fresh spinach/parsley

Cooking Instructions

  1. 1

    Heat the palm oil and vegetable oil in a dry pot.

    Sauté onions for a minute then add tomato paste and dried pepper

  3. 3

    Introduce the dried fish, locust beans and seasoning cubes and cook

  4. 4

    Add the cubed yams, water, salt and sugar and cook till yam soft then add crayfish and correct seasoning

  5. 5

    When ready, take off heat and add spinach/parsley

  6. 6

    Plate and serve hot.
