Steps

Wash and soak rice, chana daal and urad daal in enough water for 5 to 6 hours.

Grind them in a mixer. Batter should not be too thin or thick. It should be of pouring consistency.

Keep it in a warm place for fermentation. it will be fermented in 6 hours nicely.

Now add salt, turmeric powder, sugar, ginger and garlic paste, chopped green chillies, citric acid or lemon juice in batter. Mix properly and keep aside.

Now take dhokla stand. Keep water for boiling. Grease the dhokla stand plates with oil.

Now add Eno in the batter. Mix properly and immediately pour the batter in greased plates. keep them in dhokla stand for steaming. Steam it for 15 min. Check by a knife. If knife comes out clean it means dhokla is done. Switch off the gas. Let it cool down. Make pieces of your desired shape.

For tempering dhokla : Take a small tadka pan. Pour oil. Heat. Add rai, green chillies, curry patta. Pour it on dhokla. Garnish with coriander leaves.
