Ingredients

  • 3 3/4 lbsbeef shoulder, cut into 2 in cubes
  • 30 mlolive oil
  • 2onions, diced
  • 2 stalkscelery diced
  • 1carrot diced
  • 1 clovegarlic, finely chopped
  • 600 mlbeef stock
  • 375 mlred wine
  • 10 sprigsthyme
  • 3bay leaves
  • 40 gflour
  • 200 gpine mushrooms or shitake, coarsely chopped
  • 30 mlred wine vinegar
  • 375 gpuff pastry
  • 1egg beaten with 1 tbsp milk

Steps

  1. 1

    Dust beef in flour, and cook beef over medium heat

  2. 2

    Add in veggies and cook until tender

  3. 3

    Add stock wine and herbs, season with salt and pepper and simmer for 2 hours

  4. 4

    Add mushrooms and cook until meat is falling apart about 30 min

  5. 5

    Put flour in a bowl add braising liquid til a thin paste forms, add to beef

  6. 6

    Add vinegar, cool then pour into a pie dish, removing bay leaves

  7. 7

    Preheat ovee to 180°C

  8. 8

    Roll out puff pastry and place over filling, brush with egg wash and bake 20 min
