In a pot of boiling water, add 1 clove of garlic and a piece of onion. Add the chiles (washed and seeded), turn off the heat, cover, and let them soak in the hot water for at least 20 minutes.

Place the pork ribs in a pot with just enough water to cover them, along with 1 clove of garlic, a piece of onion, and a pinch of salt. Cook until the water evaporates and the ribs are tender. Let them brown slightly in their own fat.

Blend the soaked chiles with the spices and the teaspoon of Maseca. Strain the sauce and add it to the ribs. Let it simmer for a few minutes, then add the cooked nopales. Simmer for another 5 minutes and it's ready. Note: The Maseca thickens the sauce; you can use cornstarch or all-purpose flour instead.
