South Indian street Bonda inspired Mash Wrap

My all time favorite bondas with finger licking tangy green chutney and tomato chutney in one bite. I love the combination of egg and gram flour of egg bonda, which inspired me to make flat bread. The filling of wrap is an elevated form potato masala of veg bonda-french fries and crispy onion & chillies. Spreads used are tangy green chutney and cooked tomatoes. This will give the same feel of all the lip smacking street bondas in just one bite.

Steps
- 1
Mix gram flour, chilli powder, baking powder, and salt to taste. Add water to it, to make batter.
- 2
Beat the eggs with 2 tsp pepper and salt
- 3
Heat tawa. Pour some oil. Transfer the batter into a piping bag. Pipe the batter on to the tawa as shown in the figure to create a mash. Pour oil through the sides of mash.
- 4
After a few seconds, when one side is cooked, pour the beaten egg over the holes of mash. Be careful that no gap is left. Egg flown out can be cut out later.
- 5
Flip and wait for the other side to cook.Pour oil through side while cooking or else the flat bread may get brittle making it unable to roll. Transfer cooked flat breads to a plate.
- 6
To make tomato spread- heat some oil in a pan. Add chopped tomatoes, salt to taste and 1/2 tsp pepper. Cook for some time.
- 7
For green chutney grind mint leaves, coriander leaves, tamarind, 1 green chilli, 1/4 onion, ginger, salt and a little water in a grinder to a smooth chutney texture.
- 8
Now in a pan take oil for deep fry and heat. Add onions and after a while 4 green chillies both sliced length wise. As it becomes crispy and done transfer it to a plate.
- 9
Now for crispy french fries-first chop potato into strips. Secondly, put this into boiling water with some salt. After 1 minute take it out and put it into chilled water. Then transfer it onto a paper so as to make it dry. This is to lessen it's starchy texture.
- 10
Deep fry the dried potatoes first in low flame and when it looks cooked a little, in high flame till golden yellow colour. Add salt to taste before taking it out.
- 11
Now on the flat bread first spread the green chutney, then onions, potatoes and lastly the tomatoes.spreading diagonally is preferable as there is chance for breaking through the lines of mash while folding along lines.
- 12
Now roll delicately and pin the end with a toothpick.
- 13
Can be served hot with some extra tangy green chutney and tomato spread.
