I use this muffin basic recipe a lot and just vary the fruit depending on what is in season , or in the pantry. Using oil makes a moist muffin.

I use this muffin basic recipe a lot and just vary the fruit depending on what is in season , or in the pantry. Using oil makes a moist muffin.
Steps

Heat oven to 175 degrees C. Oil muffin tin or line with patty cake paper cases.

Mash bananas and wash blueberries

Add oil, eggs and sugar to a mixing bowl and whisk until combined and mixture lightens (hand whisk is fine)

Add remainder of ingredients and mix gently with a spatula or wooden spoon.

Divide muffin batter evenly between patty cake papers.

Sprinkle with granulated sugar if you prefer a crunchy top to the muffin

Bake in the oven for approximately 20-25 mins. Muffins will be springy to the touch when done.

Cool slightly then remove to a cooling rack.

Enjoy! Makes 12-15 muffins.
