
Easy Chicken Curry With Vegetables

Cooking Instructions

Cook 1 Tblsp of oil, curry paste, and onions in large saute pan over medium heat stirrng often letting it sizzle for 5-6 min

Pat chicken dry, sprinkle with salt and pepper and add remaining oil to pan.

Cook the chicken in the onion-curry mix untill golden on all sides
- 4
Add the broccoli, carrots, basil, garlic, and lime zest and cook untill the veggies are coated, about 2 mins
- 5
Add the coconut milk, chicken stock, and tomatoes and bring to simmer
- 6
Cook and simmer for 20 min then squeeze the lime to curry before serving

I like chicken curry and I've been making this for a long time. I think it's healthy as you don't use much store-bought curry roux. If you don't sauté the onions until lightly browned, you can use 1 large onion instead.Adjust the amount of curry powder to taste. There are some curry powder blends that you don't have to roast. The curry powder turns bitter if you roast it too much, so be careful. Adding the potato makes curry to thicken, so you can make this curry without store-bought curry roux.
