Couldn't find exactly what I was looking for so.... After reading through several recipes, I shot from the hip and here is what I came up with, and it was awesome!

Ingredients

30 mins
4 servings
  1. 12medium shrimp
  2. 1/4 cupsoy sauce
  3. 1/4 teaspooncorn starch
  4. 1 tablespoonchopped garlic
  5. to tasteCrushed red pepper flakes
  6. 1 tablespoonchopped parsley
  7. 1 tablespoonsesame seeds
  8. 1 tablespoonolive oil
  9. 2eggs
  10. 1 small bagstir fry veggies (not frozen)
  11. 1 small bagspinach ( not frozen )
  12. to tasteChopped green onion
  13. to tasteChopped celery
  14. to tasteMore parsley
  15. 2 cupscooked rice
  16. to tasteMore sesame seeds
  17. to tasteMore soy sauce

Cooking Instructions

    Cook rice. You can do this ahead have time, but have it warm when you add it.

    Do all your chopping and put all the veggies aside

  3. 3

    Thaw shrimp in cold water.

  4. 4

    Whisk together soy sauce, corn starch, garlic, parsley, crushed red pepper flakes, and sesame seeds.

    Place shrimp in shallow backing dish and marinade in sauce from step 2.

    Set oven to low broil.

  7. 7

    Heat olive oil and scramble the eggs in wok or large fry pan.

  8. 8

    Place shrimp in the shallow baking dish in oven to broil for 5 minutes, turning them over half way through.

    Add all the veggies to the wok or large fry pan and cook until the spinach starts to reduce.

    Add your cooked rice and stir into the veggies

    Add sesame seeds and soy sauce to taste.

  12. 12

    Plate up and put shrimp on top. Drizzle with the sauce left in the baking dish.
