New yam can be boring but when you roast it, ehn the taste is ebano. Since I had Ukana (same as ugba or oil bean) at home, I decided to treat my crew to this delightful Ugba Sauce with 4 lives ie, goat meats smoked fish, ponma and some stockfish flakes, the taste is out of this world.
Ugba is very rich in nutrients, so this make it really healthy for the everyone.

Ingredients

3-5 servings
  • 4 HandfulUkana (Ugba)
  • 1/2 cuppalm oil
  • 4fresh yellow pepper (pounded)
  • 1 teaspoonbaking soda
  • 1cooking spoonful of grinded crayfish
  • 2big pieces of Brown ponma
  • 2 handfulstockfish flakes
  • 5 piecesSmokey Grilled Goat meat
  • I medium sized smoked fish
  • leavesSome Utazi
  • Yam
  • Salt
  • cubeI bullion
  • 1medium size onion chopped
  • I tablespoon of Black pepper

Steps

  1. 1

    Cut The yam into circles. If you are using charcoal, make sure the red fire is already up...place the yam on the grill and toast till it's done, always scrapping away the black burnt side... Once that is done, set aside.

    Wash the ponma, cut in small sizes, same with grilled Goat meat, add stockfish flakes too, season well and cook till they well tender, before you remove from heat, you can add in the already wadhed and shredded smoked fish so that it gets well spiced with meat..

    Add the meat stock into a small bowl, add the Baking powder and pour in the 1/2 cup of palm oil, next mix well. You will have this thick reddish Sauce.

    Next add the grinded fresh pepper, onion, crayfish Ukana and the already cooked and season meat, stockfish, Ponmo and smoked fish, add salt,and some black pepper..Stir it up properly..

  5. 5

    Place the pot and low heat, this allows the Meats to sock up the sauce, crumble the stock cube over and lastly add the sliced or shredded Utazi leaves over it and give it the final stir..And voilà the Ukana Sauce is ready

  6. 6

    Dish into a small deep bowl and serve with the Roasted yam. This Sauce goes well with Roasted Plantain or Roasted Cocoyams too.
