Ingredients

  1. 1/2 packageJapanese brown rice noodles cooked
  2. 1 canartichoke hearts - canned in water - sliced in bite size pieces
  3. 2large roasted red peppers
  4. 1 canLarge Pearl Black Olives - halved
  5. 1 cupmarinated mushrooms - slice the largest pieces
  6. 1 cupfirm Goat Cheddar Cheese
  7. The Dressing:
  8. 1/2 cupolive oil
  9. Juice of one whole lemon
  10. pinchcrushed red pepper
  11. to tastesea salt and ground black pepper

Cooking Instructions

20 mins
  1. 1

    Cook noodles. Drain and rinse.

  2. 2

    Chop ingredients in bite size pieces.

  3. 3

    Whisk dressing ingredients and toss everything.
