Ingredients

  • 1/2 packageJapanese brown rice noodles cooked
  • 1 canartichoke hearts - canned in water - sliced in bite size pieces
  • 2large roasted red peppers
  • 1 canLarge Pearl Black Olives - halved
  • 1 cupmarinated mushrooms - slice the largest pieces
  • 1 cupfirm Goat Cheddar Cheese
  • The Dressing:
  • 1/2 cupolive oil
  • Juice of one whole lemon
  • pinchcrushed red pepper
  • to tastesea salt and ground black pepper

    Cook noodles. Drain and rinse.

  2. 2

    Chop ingredients in bite size pieces.

  3. 3

    Whisk dressing ingredients and toss everything.
