Ingredients

  • Ingredients for Joo ki Bedmi puri (barley flour bedmi puri)
  • 2 cupbarley flour (joo ka aata)
  • 1 cupwheat flour
  • 1/2 tsphing/ asafoetida
  • 3 tbspoil
  • 1 tspred chilli powder
  • 1 tsproasted cumin powder
  • 1 tspgaram masala
  • 2 tbspkasuri meethi
  • 2 tspfennel seeds
  • 1/4 tspdry mango powder
  • 1 tspajwain/ caom
  • to tasteSalt
  • as neededOil for deep frying
  • Ingredients for potato pumpkin sabji
  • 3potato cut into lengthwise with peel
  • 1 cuppumpkin cut into lengthwise without peel
  • 2-3tomato finely chopped
  • 2green chilles finely chopped
  • 2 tspgrated ginger
  • 1 tspred chilli powder
  • 2 tspcoriander powder
  • 1/2 tsphaldi/ turmeric
  • to tasteSalt
  • 1/2 tspgaram masala
  • 1 tbspchopped coriander
  • 8-10Curry leaves
  • 1 tsp(rai,jeera,sauf,dana meethi,ajwain mix)mustard,cumin,fennel,fenugreek seeds carom seeds
  • 2 tspoil
  • as requiredGenerous pinch of hingh

Steps

  1. 1

    For puries: In a large bowl add all above ingredients expect oil for deep frying add little water and make a slightly firm dough.

  2. 2

    Next make lemon size balls of the dough and roll out puries.

  3. 3

    Heat oil in a wok on high flame once oil is hot, reduce flame to medium-high and fry puries.

    Ready.

  4. 4

    For Sabji:Heat oil in a cooker Add rai,jeera,dana meethi,ajwain and let it crackle.

  5. 5

    Now add curry leaves, hingh mix stir a while.

  6. 6

    Now add tomato,ginger,green chilli,potato,pumpkin,spices and mix well.

  7. 7

    Next put 2-3 cup water and cover the lid and let it cook for 2 whistle.

  8. 8

    Once the steamed release open the cooker add chopped coriander serve with bedmi puries.
