Wash steaks and pat dry

Salt and pepper both sides, make sure there's garlic on both top anf bottom. Let rest uncovered in refrigerator for at least 2 hours. The longer the better (or if there are smelly things in ref cover with kitchen napkin not touching the meat)

At least 30 min - 1 hr before cooking, marinate steak in olive oil, dark soy sauce, Worcestershire, and rosemary. Doesn't need to be a lot, just make sure you massage it into all of the meat

Remove steaks from ref before cooking, make sure they get to room temp. Depends on how cold the ref was. maybe 30 minutes.

Preheat oven to 90°C

Brush off all excess marinade from the steaks before cooking. Especially the rosemary!

Heat olive oil in pan on high heat, sear steaks on all sides including the edges! Make sure it sizzles when touching the pan. Should be about a minutes or less per flat side if your pan is hot enough

Remove steaks from pan and place in an oven-safe container that fits them all flat without them overlapping

Place in oven and leave for 10 minutes. Flip and cook another 10 minutes.

Cover and let rest before cutting or serving
