As many of you know, I work in a hunting store, so I have access to every kind of wild game from antelope to venison.
My friends often drop by with recipes and game for me to try but the one thing I DON'T have is a lot of time for prep.
My buddy Rick taught me the absolute easiest recipe for goose I have come across yet. Especially for those who don't think they like wild goose. He says the trick is celery. It breaks down the tough texture of the meat and blends away the "gamey" taste most people dislike. As with most game meats, there is virtually NO FAT, so either cook it rare, or simmer it for HOURS and don't cook with salt, that just makes it tough.
It makes a rich gravy that I like to serve later over mashed potatoes.
Prep time is only about 20 minutes and cooks in the slow cooker for about 8 hours.
Just about the length of my usual work day. PERFECT.

Ingredients

6 servings
  • 1 bunchcelery, chopped
  • 1 (12 ounce)package baby carrots, chopped
  • 1 cupcream of celery soup
  • 1 cupcream of chicken soup
  • 1 cupcream of mushroom soup
  • 1 cupcut-up mushrooms
  • 8fresh sage leaves
  • 3 tablespoonsfresh rosemary
  • 2 tablespoonsfresh thyme
  • 10 lbsgoose, cut up

Steps

  1. 1

    Mix celery, carrots, cream of celery soup, cream of chicken soup, cream of mushroom soup, mushrooms, sage, rosemary, and thyme in a bowl.

    Put goose pieces in a slow cooker. Pour soup and vegetable mixture over the goose.

  3. 3

    Cook on High until goose is tender, 6 to 8 hours.

  4. 4

    Serve in wide flat bowls with fresh cilantro and crusty rolls to sop up the gravy.
