Ingredients

  1. 1 poundsmoked turkey sausage
  2. 1 cupdried brown lentils, rinsed
  3. 1 can (15 ounces)cannellini beans, rinsed and drained
  4. 1 carton (32 ounces)reduced-sodium chicken broth
  5. 1 cupwater
  6. 1 can(14-1/2 ounces) fire-roasted diced tomatoes, undrained
  7. 6 cupsfresh spinach (about 4 ounces)
  8. Crumbled goat cheese

Steps

  1. 1

    Slice turkey sausage into bite sized pieces.

  2. 2

    Put all ingredients except the goat cheese in the crock pot and cook on low for 8 hours.

  3. 3

    Serve hot with 1 Tbsp of goat cheese.
