Ingredients

2 Persons
  • For Chhole
  • 100 gmchickpeas(Kabuli chana)
  • as neededwater
  • to tasteSalt
  • 1 teaspooncoriander powder
  • 1/2 teaspoonturmeric powder
  • 1/2 teaspoonred chilli powder
  • 2 teaspoonchhole masala
  • 4green chilli
  • 5-6garlic cloves
  • halfinch ginger
  • 2big onion
  • as neededoil
  • 1 pinchAsafoetida
  • 1 inchcinnamon stick
  • 1dried red chilli
  • 2bay leaves
  • 1 tspcumin seeds
  • 2 cardamom
  • 4-5clove
  • 2mace
  • 4 tablespoonTamarind water
  • 1 tablespoonCoriander leaves
  • For Bhature
  • 250 gmMaida(plain flour) -
  • to tasteSalt
  • 1/2 teaspoonsugar
  • 1 teaspoonCarom seed
  • 3 tablespoonPlain curd
  • as neededWater

Steps

  1. 1

    For Chhole
    Soak chickpeas in water for 8 hours.

  2. 2

    After 8 hours,in a pressure cooker take 1 and half cup water,half teaspoon salt and soaked chickpeas.cook for 5 whistles.

    In a bowl take coriander power,turmeric powder,red chilli powder,chhole masala, add some water and soak all spices.

    In a grinder jar take green chilli,ginger,garlic,onion and finely grind all.

    In a pan take 2 big spoon oil,add dried spices and saute them.

    Add grinded paste and cook for 5 minutes(until onion paste changes colour)

  7. 7

    Once cooked add soaked spices,asafoetida and salt(remember we alreaded added some salt while boiling chickpea).Cook until oil separates.(Add some water in between if it stick to pan).

    Once cooked add boiled chhole and cook for 5 minutes.

    Add tamarind water and cook another 2 minutes, garnish with coriander leaves and serve hot with bhature or chapati.

    For Bhature
    Mix maida,salt,sugar,carom seed and curd and knead soft dough using water.Let dough rest for 30 minutes.

    After 30 minutes take few oil drops in hand and knead dough again for 2 minutes.

    Make small dough ball, roll it like poori.

    Heat oil and deep fry bhature until golder brown.
