Struffoli

As the daughter of a woman from Avellino, I should have learned to make struffoli—a classic Christmas dessert—long ago. In our home, it’s not Christmas without them. But since we were always guests at an aunt’s house, they were always ready and I never actually saw them being made. This year, I decided to try making them myself. My mom’s cousin, the award-winning chef Annamaria Ciampi, shared her recipe with me. I have to say, for my first time, everyone loved them, so I’ll definitely make them again! ^_^

Make a mound with the flour on your work surface. In the center, add the eggs, sugar, salt, anise liqueur, and softened butter. Knead until you have a smooth, elastic dough. Shape into a ball, cover with a kitchen towel, and let it rest in the fridge for at least 30 minutes.

Take the dough and roll it into thin ropes. Cut into small pieces and fry them in plenty of hot oil for a few minutes, until golden brown.

Drain the fried pieces on paper towels to remove excess oil.

Warm the honey, toss the fried balls in the honey, then arrange the struffoli on a serving plate or in individual paper cups. Sprinkle with rainbow sprinkles or silver dragées if you like. This makes a great treat to share with friends during the holidays.

Note: You can also bake the struffoli instead of frying them. I haven’t tried this, but it’s a lighter option. But let’s be honest—at Christmas, every calorie is worth it! So don’t worry about the calories, just enjoy celebrating with friends and family. The important thing is to enjoy the holidays together, especially with traditional desserts. Happy Holidays!
