Steps

Choose tender or young carrot that are fresh.Wash carrots under running water.

Peel them & grate in a food processor or with hand grater.Set this aside.

In a kadai take 1 tbsp ghee & dry roast the nuts on a low heat until crunchy.Set aside to cool & chop them.

In that kadai add the grated carrot & stir for sometime till the raw smell of the carrots gone.

Bring milk to a boil in a heavy bottom pot or deep pan.Add the grated fried carrots & begin to stir.

Cook until the milk has completely evaporated.Keep stirring constantly in between to prevent burning.

Continue to cook until the moisture evaporates & the halwa thickens.

Add sugar &stir.Sugar would release lot of moisture.Cook until half the moisture evaporates.Add 1 tbsp ghee & stir well.

Add grated khoya /mawa & cook for 2,3 mints.

Garnish Carrot/Gajar Halwa with nuts.Serve hot or chilled.
