Ingredients

12 + muffins
  1. 1 1/2 cupflour
  2. 1 tspbaking powder
  3. 1 tspbaking soda
  4. 1/2 tspsalt
  5. 3large ripe bananas mashed - they should be nice and ripe but not gross
  6. 3/4 tspwhite sugar
  7. 1/3 cupbutter melted and cooled
  8. 2 tbspchia seeds
  9. 1 cupwhite chocolate chips
  10. 1 cupcraisins. Don’t skip these
  11. I usually double this recipe because we eat 6 of them right away and then don’t have any for the next day

Cooking Instructions

    To my beautiful children. Read the whole recipe and get all your ingredients together before you start.

    Preheat oven to 350 degrees and get muffin tins ready with paper liners. You could grease the tin but I find that annoying to clean up. Spend the money on the paper liners.

    Sift together the flour, baking powder, baking soda, and salt and set aside. If you live above 4500 ft use high altitude flour.

    Combine bananas, sugar, egg, and melted butter in a large bowl.

    Fold in flour mixture.

  6. 6

    Add white chips, chia seeds, and craisins.

  7. 7

    Mix until smooth.

  8. 8

    Scoop into muffin pans. You will be tempted to taste the batter. Go ahead there’s no raw eggs.

    Bake for 25-30 minutes. With every baking item don’t over bake. Use a toothpick. Start checking about 20 minutes.

    Let cool about 5 to 10 minutes and take out of tin

    Hide from family.

    And as always be happy when you cook. It’ll make your food taste better.
