Sesame rice/ Ellu saadham

This is a quick and healthy lunch box recipe. Sesame seeds are highly nutritious and are an excellent source of calcium. The spice powder can be prepared ahead and stored in fridge but I'd prefer it to be freshly roasted and ground for an aromatic rice.

This is a quick and healthy lunch box recipe. Sesame seeds are highly nutritious and are an excellent source of calcium. The spice powder can be prepared ahead and stored in fridge but I'd prefer it to be freshly roasted and ground for an aromatic rice.

Heat a heavy bottomed pan. First, dry roast the urad dal and red chilli until the dal turns golden. Transfer the roasted ingredients to a bowl

Add sesame seeds to the same hot pan and wait till it splutters nicely. Transfer the roasted seeds to the same bowl

Once cooled, grind to a coarse powder and keep aside

In a pan, heat sesame oil. Add mustard seeds and wait till it splutters.

Add urad dal, channa dal, curry leaves, cashews and mix until the dals and cashews turn light brown

Add the cooled rice, spice powder and salt. Give it a good, gentle mix. Ensure the rice grains are separate

Serve the sesame rice with some appalam or potato crisps
