This mixture can be used to make biscuits, pancakes, waffles, etc. Use whenever you have a recipe that calls for "Bisquick mix."

Ingredients

  1. 4 cupsrice flour
  2. 1 1/3 cuppotato starch
  3. 2/3 cuptapioca starch
  4. 3 tspxanthan gum
  5. 3 tbspsalt
  6. 1 cupvegetable shortening or cold butter

Cooking Instructions

  1. 1

    Mix all dry ingredients in a bowl and sift three times to make sure they are well-blended.

  2. 2

    Cut shortening or cold (not softened or melted) butter with a pastry blender until mixture resembles fine crumbs. (If you have a large enough food processor, that'll work too.)

  3. 3

    Store mixture in an airtight container or ziplock bag for up to four months. Note that if you use butter, you will need to store this in the refrigerator, to keep the butter from melting and/or going rancid.

All gluten-free (not by choice), and I'm starting to dabble in vegetarian meals. I also want to learn how to make more foods for friends of mine who have their own food allergy/sensitivity issues (FODMAP especially).
