Ingredients

  • 200 gmargarine
  • 200 gsugar
  • 400 gself raising flour
  • 1lemon juice n zest
  • 1 tbsplemon essence
  • 4eggs

Steps

  1. 1

    Cream sugar n margarine till light n fluffy

  2. 2

    Add eggs one at atime beating after each addition

    Add the lemon juice,zest and essence

    Sift flour n mix to form a batter

    If the batter is too thick you can add 1-2 tbs water or milk

  6. 6

    Scoop batter on muffin pan lined with paper liners 3/4 full

  7. 7

    Bake at 170℃ in a preheated oven for 20-25 mins

    If u wish to frost let them cool completely enjoy
