Couscous is a traditional dish enjoyed by all Algerians and is often prepared by Algerian families, especially on Fridays. It is also one of the main dishes served at weddings and special occasions. The way it is made varies from region to region. Today, I’m sharing with you one of the specialties from Tizi Ouzou, a region known for its rich and diverse cuisine: couscous with artichokes, also called 'Seksu Staga' in Amazigh. This is a seasonal dish, typically made during artichoke harvest time.

Ingredients

  1. Artichokes (cleaned)
  2. as neededLamb or beef pieces,
  3. 1onion
  4. 1tomato
  5. 1 handfulchickpeas
  6. 2carrots
  7. 1potato
  8. 1large tablespoon tomato paste
  9. Salt
  10. Black pepper
  11. Turmeric
  12. Sweet paprika
  13. Hot paprika
  14. Cumin
  15. Dried basil
  16. Prepared couscous

Steps

    First, clean the artichokes and boil them in water with the juice of 1 lemon for about 20 minutes, then drain.

    In a pressure cooker, add 4 tablespoons of oil, the meat pieces, chopped onion, and chopped tomato. Add all the spices, salt, and tomato paste. Sauté briefly, then add hot water. Add the potato and carrots, cut lengthwise, then add the artichokes and chickpeas. Cook until the meat and sauce are done. At the end, sprinkle a little dried basil. Serve with steamed couscous drizzled with olive oil. Enjoy with hot green peppers for extra flavor.
