Ingredients

  • 2 cupsmashed potatoes
  • Spring onions
  • 1 tablespoonflour
  • 1 cupfine bread crumbs
  • 2Eggs
  • 2Egg yolks
  • 1/2 CupParmesan cheese. 1/2 cup Sour cream (both optional)
  • Spices to your taste
  • Oil for deepfrying. You can opt to bake instead

Steps

  1. 1

    In large mixing bowl, combine potatoes, chives, egg yolks, Parmesan cheese, and flour. If you want to, add spices like ginger n garlic powder yo the mix.

  2. 2

    Mix thoroughly and roll into golf ball size portions.

  3. 3

    Dredge croquettes in egg and then bread crumbs.

  4. 4

    Heat oil over medium-high heat.
    Working in batches, place croquettes in hot oil, using teaspoon to turn and brown evenly.

  5. 5

    Remove portions from oil when golden brown, this should take about 3 minutes.

  6. 6

    Once cooked, remove from oil, drain n let cool slightly.

  7. 7

    Serve Warm, with Sour Cream or any dip of choice
