A delicious #lowcarb breakfast! You can add toast if you want, I normally would have, but actually this is completely filling without it 😋

Heat up oil in a deep frying pan and fry chopped up sausages for 4 minutes (until lightly browned).

Add chopped pepper and onion. Fry for 5 minutes (until softened).

Add tomato purée and spices. Cook for 1 minute and then add a splash of water and mix well.

Add chopped tomatoes. Bring to a simmer and cook for 5-10 minutes until thickened a bit.

Make two gaps for eggs and crack them into the pan.

Cover and heat for 5 minutes (don’t overcook the eggs!)

Serve with natural yoghurt on top 😀
